From The Beginning
The earth is part of Niels Udsen’s being. His father, a successful farmer and businessman, immigrated to America in the late 1940’s, returning to visit his Native Denmark frequently with his son. It was on one of those trips that Niels (age eight) met Bimmer (who was six); that is when the story of Castoro Cellars truly began. Six years later, at the age of 14, on another visit to Denmark, Niels’ (future) father-in-law began to teach him how to make wine.
Niels studied Agribusiness at Cal-Poly SLO, and trained in Italy. Returning to the Central Coast (Paso Robles), Niels worked at Estrella Vineyards Winery. Eventually he and Bimmer purchased property, launching their own brand in 1983. Niels and Bimmer loved the outdoors, respecting and being committed to preserving the earth. Their values and way of thinking became their guidepost and mission statement: “Sustainability, the act of incorporating environmental responsibility, social equity and economic viability in all aspects of the winemaking process…..ensuring future generations will enjoy the fruits of the land.”
Castoro Cellars practices this philosophy in all aspects of their life: Farming, community involvement, charitable giving, family, fun and of course: DAM Fine Wine!

The first time visitors may come for the wine, but quickly discover there is much more to Castoro Cellars than just sampling award winning wines. There is a feeling of tranquility, friendship, family – and a special “state of being” that comes over you once you relax, sip and experience some of the exceptional wines from grapes grown on the estate vineyards. You may also be treated to a glass of Castoro’s “bubbly,” learning this is one of the few Paso Robles wineries producing a California Champagne, using the traditional “méthode Champenoise.” Castoro is committed to always “go the extra mile” in everything they do to assure quality. You will find this is not only a winery with a great tasting room, but also a visionary – a trendsetter and innovator.
The New Family Dream
When Niels trained in Italy decades ago, it was his dream to one day produce quality Italian style grappa. Now that dream has become a reality, with the opening of Bethel Rd. Distillery in January, 2019. The distillery is located just across the road from Castoro Cellars. Keeping the tradition of a family operation and looking to the future, Bethel Rd. Distillery is run by Max and Luke Udsen, Luke’s wife Lauren and Max’s girlfriend, Malina. Currently there are two Italian Grappas, two brandies and a gin being produced, and available for tasting. Visit this newest, exciting adventure, sip and feel the spirit, enjoy entertainment and a cool vibe in a beautiful setting, as the Udsen family continues to expand their, and your horizons.
