It’s almost time for the 17th annual California Artisan Cheese Festival, March 24-26 at the Sonoma County Event Center in Santa Rosa – an opportunity to meet cheesemakers, sample Sonoma County wine and beer, learn about local farms and dairies, and attend cheesemaking seminars.</p> <p><a href="https://www.artisancheesefestival.com/">ArtisanCheeseFest2023</a></p> <p>Few people know cheese like cookbook author and expert, Janet Fletcher, of Planet Cheese, who just announced her 11th annual World Cheese Tour classes at Winston’s Café in Napa. </p> <p><a href="https://www.janetfletcher.com/world-cheese-tour-classes-2023">WorldCheeseTour2023</a></p> <p>We wanted to know the why of whey, and how she came to be a foremost authority on cheese.</p> <p> </p> <p><strong>Tell us how and why you became cheese-obsessed.</strong></p> <p><em>As a food writer and cookbook author, I am always looking for the next food trend. In the late 1990s, I noticed that restaurants were starting to get more creative with the cheese course. In the past, you might get a cold wedge of tired Brie when you ordered cheese in a restaurant. But a few ambitious restaurants were starting to serve better cheeses with housemade bread or interesting condiments. I thought I might do a little book on these new ideas for serving cheese that would make it more appealing to people who weren’t accustomed to having a cheese course. My book, The Cheese Course, was published in 2000. At the time I was on the food staff at the San Francisco Chronicle and they asked me to start writing a weekly cheese column. And that was the slippery slope that led to my deep dive into cheese, if I can mix metaphors.</em><br />  </p> <p><strong>Who came up with the name “Planet Cheese?”</strong></p> <p><em>I did. Maybe in the shower. I have no recollection of how or when, to be honest. But I still like it because it suggests that cheese is an enormous world of adventure and discovery, which is how I feel about it. Planet Cheese is going on nine years old, and I have posted once a week without fail. There’s always something cheesy to write about, whether it’s a new cheese, a recipe, an event or an important issue.</em><br />  </p> <p><strong>What’s your first memory of cheese?</strong></p> <p><em>Not good. Unless guests were coming, the only “cheese” we had in my childhood home was Velveeta. And there’s a reason I put that in quotes. When guests came, my mother upgraded to Cracker Barrel.</em></p> <p><br /> <strong>What’s the most unusual animal from which you’ve had cheese?</strong></p> <p><em>I guess it would be yak. Some people who had been working in rural Tibet brought yak cheese to a cheese event I attended in Wisconsin a few years ago. It was pretty nasty, although I don’t think it has to be.</em></p> <p><br /> <strong>What are some of the best new cheeses you tried in 2022 and how did you discover them?  </strong></p> <p><em>Typically, I discover cheeses when I spot them in a store for the first time, or realize that I’ve been looking at that cheese for a long time and never tried it. Sometimes cheesemakers send me new items, but mostly I stumble on them or hear about them from distributors.<br /> I adore all 10 cheeses I wrote about in a recent post (2022Unforgettables), like Boont Corners from Pennyroyal Farm (goat’s and sheep’s milk from Anderson Valley). This aged raw milk wheel has a natural rind, an aroma of damp cave, roasted nuts and artichoke, and a sturdy texture that finishes creamy.  However, most aren’t “new” in the sense of recently created. Some are just relatively new imports, like Rispens (a sheep Gouda), Ur-Eiche (a raw cow’s milk cheese from Switzerland) and Fleur Soleil (an herb-coated goat cheese from France). At least not knowingly.</em></p> <p><strong>It seems like fondues and raclettes are making a comeback. Will this stay on trend?</strong></p> <p><em>Who doesn’t love melted cheese? I had a post in Planet Cheese a couple of years ago sharing some fondue tips from Joe Salonia, a New Yorker who is a past Fonduel champion. Fonduel is a goofy competition among people in the cheese trade. Joe is a sales rep for a Swiss cheese consortium so he knows fondue. I shared his recipe and tips in Planet Cheese.</em></p> <p><br /> <strong>What’s your fave combo for creating a fondue that takes you to the Swiss Alps from the first dip?</strong></p> <p><em>Gruyère for sure. Then something stronger like Raclette, Appenzeller or Challerhocker. A good Fontina Val d’Aosta or Comté is also nice to include but neither is Swiss.</em></p> <p><br /> <strong>Current favorite cheeses from California?</strong></p> <p><em>Oh, don’t make me choose. But I’m really impressed with the cheeses coming from Pennyroyal Farm in Boonville. I love Laychee, their freshest cheese, and Boont Corners, their 2- to 4-month-old rinded raw-milk wheel. Both are goat cheeses with sheep’s milk added, when they have it. (Sheep are off-duty from September through February.)</em></p> <p><br /> <strong>What state in the US is totally underrated for cheese?</strong></p> <p><em>Wisconsin. Many people (including some in Wisconsin) associate the state with cheese curds and inexpensive non-branded Cheddar. But there are some first-rate producers there, including Uplands Cheese (Pleasant Ridge Reserve, Rush Creek Reserve), Hook’s (for aged Cheddar and blue cheese), Hidden Springs Creamery (for sheep cheese), Carr Valley (for Cave Aged Marisa, a sheep cheese) and Deer Creek Cheese for its large line of aged Cheddars.</em></p> <p><br /> <strong>You have a bottle of very rich, ripe Cabernet, a bottle of  Sauvignon Blanc and a fruity Russian River Pinot. What are your go-to cheeses for maximum enjoyment with these styles of wine?</strong></p> <p><em>With Cabernet, I love an aged sheep cheese, like Manchego or a pecorino Toscano or Friesago from Shepherd’s Way Farms in Minnesota. But my favorite in that category would be Ossau-Iraty, an aged sheep cheese from the French Pyrenees.<br /> With Sauvignon Blanc, if it’s steely and not oaky, I like a young goat cheese: Cypress Grove’s Humboldt Fog, Vermont Creamery’s Bonne Bouche or Coupole, or Tomme de Chèvre Grandmère from France.</em></p> <p><em>With Pinot Noir I like a cheese with some mushroomy notes. Roast chicken is its ideal companion or serve it with a green salad for a meatless meal.</em>  – Janet Fletcher</p> <p>Serves 4 to 6</p> <p>• 2 teaspoons unsalted butter<br /> • 3 tablespoons extra virgin olive oil<br /> • ½ pound mushrooms, cultivated or wild, sliced or quartered<br /> • Sea salt and freshly ground black pepper<br /> • 2 cups thinly sliced leeks, white and pale green part only<br /> • 2 cloves garlic, minced<br /> • 1 teaspoon dried herbes de Provence<br /> • ½ pound plain focaccia, 1 to 2 days old, in 1-inch cubes<br /> • 4 large eggs, beaten<br /> • 2 cups whole milk<br /> • 4 to 5 ounces fresh goat cheese with no rindPreheat an oven to 375°F. Using 1 teaspoon butter, grease the bottom and sides of a 2-quart baking dish.</p> <p>An oval baking dish measuring about 13x8x1-1/2 inches works well.</p> <p>Heat 1-1/2 tablespoons olive oil in a large skillet over medium-high heat. Add the mushrooms. Do not stir for 30 seconds to allow the mushrooms to sear on one side. Then season with salt and pepper and continue cooking, stirring occasionally, until the mushrooms are nicely browned and tender, about 3 minutes, adjusting the heat if necessary to prevent scorching. Set aside on a plate.</p> <p>Let the skillet cool slightly, then add the remaining 1-1/2 tablespoons olive oil and return to medium-low heat. Add the leeks, garlic and herbes de Provence. Sauté until the leeks are soft, about 5 minutes.</p> <p>In a large bowl, combine the focaccia, mushrooms and leeks. Toss gently with a spatula.</p> <p>In a bowl, whisk together the eggs, milk, 1 teaspoon salt and several grinds of black pepper. Pour over the bread mixture and stir gently with a rubber spatula. Let stand for 15 minutes, stirring once or twice, so the bread absorbs some of the liquid. Add the goat cheese in small clumps, then stir gently to distribute.</p> <p>Transfer to the prepared baking dish and dot the surface with the remaining 1 teaspoon butter. Bake until puffed, nicely colored on top, and firm to the touch, about 35 minutes. If you want it a little more crusty on top, put it under a preheated broiler for a minute or two. oldest) farmlands in Sonoma. On encouragement of his father, founder Vittorio Sangiacomo, a Genovese Italian, came to America in 1913. After working at an Alameda produce farm and later in San Francisco in the garbage industry, fourteen years after arriving in America, Vittorio was able to purchase Eden Dale in 1927, an 1800s ranch with 55 acres of established apple, pear, peach, prune, and cherry trees. Being a farmer at heart, Vittorio developed the orchard over the years using sustainable farming practices to become one of California’s largest pear producers by the 1960s. It wasn’t until 1969 that he and his family decided to shift into grape-growing. At the time, Sonoma and Napa Valley were in their early days of being known for high quality wine grapes. It was Vittorio’s and his children’s visionary thinking which prompted them to take the calculated risk and replant fruit crops to vineyards. Their 50 years of farming vineyards, now as a Certified California Sustainable Winegrower, has made the Sangiacomo family’s prized fruit highly sought after. The original Eden Dale property, affectionately called “Home Ranch”, has expanded to 100-acres, which is part of their 1,600 planted acres across Sonoma and Napa Valley producing ultra-premium, cool-climate grapes for more than 85 clients including many of wine’s top cult producers.<br /> Vittorio’s grandchildren, Steven Sangiacomo, Mia Pucci, and Mike Sangiacomo, work side-by-side every day running their grape-growing operations and focusing on their own ultra-premium bottlings of Sangiacomo Family Wines, crafted by expert Chardonnay and Pinot winemaker James MacPhail. Shaded by old-growth olive trees and umbrellas, the expansive terrace is sectioned into tasting vignettes allowing each group to experience an intimate, semi-private guided tasting with one the winery’s knowledgeable and friendly hosts. tunnel, fed by cool maritime breezes off the Pacific Ocean at Tomales Bay. Officially established as the 17th sub-AVA of Sonoma in 2017, more than two-dozen wineries are part of the “Wind to Wine” alliance that promotes this windy fog-driven region that straddles northern Marin and southern Sonoma counties.</p> <p><img alt="Hilary Cline quote" data-entity-type="file" data-entity-uuid="968bd963-99ca-4bc9-8f76-8798899214d0" src="/sites/default/files/inline-images/Screen%20Shot%202022-12-01%20at%2011.19.10%20AM.png" /></p> <p>“The Gap” encompasses 200,000 acres, stretching from Bodega Bay, southeast to Highway 37 at Sears Point on San Pablo Bay, then to the base of Sonoma Mountain on the north side. Here, 4,000 acres are planted to vines: 75% are pinot noir, 13% chardonnay and syrah, 12%. The wines are defined by wind: perky, acid-driven whites, athletic dancer pinot noirs and muscular syrahs. There are scattered plantings of albarino, riesling and viognier, too.</p> <p><strong>Kimberly Pfendler</strong> of Pfendler Vineyards says her late husband Peter, who passed away in 2007, began planting vines in 1992. “Some of his early plantings were the first grown in the windiest portion of Petaluma’s ‘Wind Gap,’ including the site now known as Gap’s Crown. The region is like a wind tunnel, with the gaps in the coastal hillsides funneling in cool Pacific breezes and ocean fog from the Pacific through the city of Petaluma and then south to San Pablo Bay.”</p> <p>Although many were involved in establishing the AVA, Pfendler particular credits board president and vintner, Rickey Trombetta Stancliff, vintner Ana Keller, and grower Doug Cover, for being instrumental in making it happen.</p> <p><strong>Ana Keller</strong>, Estate Director of Keller Estate, says her family has been farming in Petaluma Gap for 30 years, and has 90 acres of vines. “When we first planted in 1989, we were advised by UC Davis that chardonnay would work, but pinot noir might not ripen, because it’s too cold. We were surprised at how ripe the chard got! Rombauer was looking for grapes and we sold to them until their own vineyards came online. We were the acid in their wine!  We planted pinot noir in 1994, on an east/west orientation, like in Burgundy. In 2018, we replanted with a NW/SE orientation.”<br /> She says that like clockwork, the wind comes up every day at 2pm, from March through October. “This means less mildew pressure and less frost.”</p> <p><strong>Hilary Cline</strong> of GUST sources from two distinct sides of The Gap, which she considers “the most exciting new AVA in California.” She explains, “Diamond Pile is on the valley floor, and while that typically means a site will be warmer, in the Gap this is actually our cooler site, as the fog settles in and lingers, and it is more exposed to afternoon winds.” Skins thicken, and blocks here are last to ripen, amping up tannin and savory elements. “Catapult Vineyard sits at higher elevation, so it’s more protected from the wind, and contributes more of the high toned red fruits in our pinots and the lush fruit character in our chardonnay.”  </p> <p><img alt="Steve Sangiacomo quote" data-entity-type="file" data-entity-uuid="06b2605a-d97c-44cf-9239-a7827c0ef1a2" src="/sites/default/files/inline-images/Screen%20Shot%202022-12-01%20at%2011.19.28%20AM.png" /></p> <p>Legendary Sangiacomo Roberts Road Vineyard comprises 130 acres at the base of Sonoma Mountain, at the far northern edge of the Petaluma Gap, where the fog settles first and leaves last. Says <strong>Steve Sangiacomo</strong>, “It sees more wind, fog and coolness than any of our other chardonnay vineyards. This, leads to slower ripening, smaller berries and more intensity in the fruit.”</p> <p><strong>Joe Nielsen </strong>of Ram’s Gate works with Roberts Road Vineyard and Gap’s Crown Vineyard, among others, noting the conditions are similar to his estate vineyard on the San Pablo Bay. “We embrace the Petaluma Gap’s maritime influences,” he says.“ The fruit from Gap’s Crown is extremely flavorful and dynamic, without high levels of alcohol.”</p> <p><strong>Garry Brooks</strong> of Brooks Note (est. 2012), makes wines from three different areas of the Gap. Azaya Ranch, on the far west side, lies in Marin County, and is one of the region’s coldest sites. “We usually pick Azaya a full month after most of our other pinot vineyards.  It makes elegant, floral wines with great length and a lovely herbal finish.”<br /> The Brooks Note Petaluma Gap pinot noir comes from Paradise Vineyard, across from Sonoma Raceway, and Panther Ridge Vineyard, on Sonoma Mountain, east of Penngrove. “The vines at Paradise get blasted by wind from both San Pablo Bay and the Petaluma Gap,” says Brooks. “It’s a cold, beautiful, inhospitable site for growing grapes, which makes amazing wines.” Panther Ridge has volcanic soil, with pumice and basalt, and delivers dark character.</p> <p>Asked which varietal best showcases this unique climate, Ana Keller says chardonnay. “The acid and the minerality make it 100% unique, and very spicy. We get a lot of tamarind in barrel-fermented chards.”</p> <p>Joe Nielsen of Ram’s Gate votes for pinot noir, admitting he has far more experience with it than chardonnay from The Gap. “Pinot noir grapes are often extremely concentrated and fully develop over a longer period of time, creating extremely well-balanced fruit.”</p> <p>Hilary Cline of Gust gives the nod to syrah: “It’s the unsung hero, expressing a complex mix of bright florals and peppery, strong tannins.”<br /> Gary Brooks says, “I drink a lot more pinot than chardonnay, so my answer is biased, but I think it’s definitely pinot noir.  Higher wind speeds in the gap cause a little thicker skins on the grapes.  Because pinot noir is fermented on the skins, I think we see more impact in the finished wines.”</p> <p>Steve Sangiacomo told us, “Both Burgundy varieties are so transparent in their terroir, however pinot noir expresses the trademark Petaluma Gap lushness the region has become known for. The pinot noir grapes in this AVA need a longer time to ripen, allowing them to develop deep, rich flavors with layered complexity.”</p> <p>Russell Bevan of ADDAX, who has sourced from Petaluma Gap vineyards (Pfendler, Sunchase, Five Wells) since 2013, had this observation: “To date, pinot noir has been the pivotal varietal in the Petaluma Gap. Moving forward, I believe chardonnay has a special home in the AVA. They have an incredible freshness and density that make them very unique.”</p> <p> </p> <p><img alt="Petaluma Gap wines" data-entity-type="file" data-entity-uuid="3737037b-cebe-4773-9402-f039445e4021" src="/sites/default/files/inline-images/PetalumaWineLineup.jpg" /></p> <p><strong>TASTE THE GAP</strong></p> <p><strong>GUST 2018 Syrah</strong> – <em>Smoky aromatics, with dark soy sauce, tamari, barbecued pork and baked plum: intense.</em></p> <p><strong>Keller Estate 2019 La Cruz Vineyard Pinot Noir</strong> – <em>Gorgeous color, aromas of mulled strawberries and ripe cherries, and a beam of cedar running through this high acid, complex wine make it compelling. Fleshy without being the least bit heavy.</em></p> <p><strong>Keller Estate 2019 Rotie Syrah and Viognier</strong> – <em>Sun-baked fennel, seaweed, pine and Australian licorice grace the nose, with meaty flavors of chorizo, boar sausage, basil and oregano on the surprisingly supple, smooth palate. Tannins so well tamed.</em></p> <p><strong>Ram’s Gate 2018 Gap’s Crown Pinot Noir</strong> – <em>A superb example of cool climate Petaluma Gap, with its breeze-driven floral and cedar notes, and its tangy cran-raspberry core, that evanasces on your tongue. Engaging to the max.</em></p> <p><strong>Sangiacomo Vineyards 2019 Sangiacomo Chardonnay</strong> – <em>Divine wildflower, pineapple, lemongrass and guava aromas and flavors are tightly wound around crisp acid; finishes with lemon pudding pie with graham cracker crust.</em></p> <p><strong>Whitehall Lane 2021 Blanc de Noirs Sparkling Wine</strong> – <em>This is a gorgeous Blanc de Noirs from  Petaluma Gap.<br /> The bouquet showcases ripe melon and juicy red cherries. On the palate, red fruits dance: crunchy pomegranate, ripe strawberry, and red plums. New this year, each participating winery will have a Winter WINEland photo backdrop so you can create your own photo album of memories from the weekend. Each wine tasting ticket comes with a Wine Road branded glass and a six-bottle wine bag.</p> <p> </p> <p><strong>Barrel Tasting Weekend, March 3-5, 2023, 11am-4pm</strong></p> <p>Wine Road will host its annual Barrel Tasting, offering three days of barrel sampling and the opportunity to purchase “futures” at participating wineries. Buying “futures” is a chance to buy, often at a discount, a wine that is still aging in the barrel now, then come back to the winery (or have the wine shipped) when the wine is bottled, typically within 12-18 months. Many wines are so limited, buying futures is the only chance to purchase them. In addition, Barrel Tasting is widely heralded as an educational weekend where wine lovers of all levels learn about the work put in to making wines after harvest, but before the wine is bottled, often hearing directly from the winemakers during the event, as Barrel Tasting is a favorite event amongst Wine Road winemakers. Additionally, several wineries will host Friday evening receptions to kick off the weekend. red wine that warms the heart and tastes deliciously bold and strong. You may just be sipping on a lovely Cabernet Sauvignon. In the world of wine, Cabernet Sauvignon is one of the most widely recognized red grape varieties. It is one of the seven “noble” grape varieties which also include Pinot Noir, Merlot and Syrah. Noble grapes is a term which describes recognizable grapes that produce top quality wines all over the world. The noble grape varietals are also noted for the specific expression of the local terroir where they are grown. Cabernet Sauvignon definitely fits the bill!</p> <p> </p> <p>In the winery, Cabernet Sauvignon is an easy and straightforward wine to make which makes it a kind of favorite wine of winemakers. After crushing, the mixture of juice and grape solids known as “must” is pumped into large fermenting vessels and either the native or added yeast begins the fermentation. As the mass of pulp and skins rises to the top of the fermenting wine, forming a cap, it is either punched down into the juice, or the juice is pumped back over the cap to extract the color and flavor from the skins.</p> <p>After fermentation ceases, the pulp and skins are left to macerate for a period of time from a few days up to a month, depending on the style the winemaker is looking for. Typically, the wine is then pressed, and the clear wine is run off into oak barrels.<br /> Cabernet Sauvignon loves oak and can withstand long periods of time in the barrels. The rich and robust profile of the grape are softened with oak and aging and the flavors of vanilla and spice complement the natural notes of blackberry, blackcurrant and tobacco that is so characteristic of the grape. In winemaking, the influence of oak on the overall wine structure can be managed with the use of different kinds of oak such as American or French.</p> <p> </p> <p><img alt="22,000 acres of Cabernet in Napa Valley" data-entity-type="file" data-entity-uuid="9fe7bbf0-c59a-499f-9655-0fbcbe837cdb" src="/sites/default/files/inline-images/Cabernet%20acres.jpg" /></p> <p>In the United States, if a label says Cabernet Sauvignon, at least 75% of the grapes used must be Cabernet Sauvignon. The primary fruit aromas and flavors of Cabernet are mostly of the black fruit family and can include black currant, cassis, blackberry, black plum and black cherry. There are often secondary aromas and flavors of herbs, spices, green olives, mint, leather and tobacco. If grown in cooler climates, where it may not be as ripe when picked, there are usually vegetal, asparagus and green pepper notes that are likely to be present. The use of oak barrels will impart flavors of vanilla and smoke, as well as oak. With aging, the notes of cedar, leather, cigar box and earthy qualities are added to the mix.</p> <p> </p> <p><a href="https://www.riedel.com/en-us/shop/red-wine-glasses#gvs=cabernet-sauvignon"><img alt="Cabernet glass shape" data-entity-type="file" data-entity-uuid="e1822d01-097b-4aa1-a49f-0a71d7b81888" src="/sites/default/files/inline-images/Cabernet%20in%20a%20Glass.jpg" /></a></p> <p>Cabernet Sauvignon possesses a great intensity and depth of flavor and it’s classic profile is rather full-bodied with high tannins and a strong acidity that contributes to the wine’s aging potential. The thick skins contribute to the tannic structure and young Cabernet can be rather harshly astringent or “tight” in the mouth. These tannins, however, also act as a preservative, helping the wine to age, and as it ages, the tannins soften. Many years ago, if a Cabernet was drinkable in its youth, it was dismissed as a bad wine. Modern winemaking techniques now produce wines that are supple enough to be enjoyed young, but can also age gracefully for many years.</p> <p> </p> <p><img alt="Cabernet vineyard" data-entity-type="file" data-entity-uuid="db47d3fa-c4ad-4d53-86e6-3636679bdd53" src="/sites/default/files/inline-images/Cabernet%20sign.png" /></p> <p><strong>Get The Dirt – Understanding terroir and its influences</strong></p> <p>Cabernet Sauvignon is a natural cross of Cabernet Franc and Sauvignon Blanc that occurred by chance sometime in the 1600s in France and is grown in nearly every major wine producing country.<br /> A big part of the global success of Cabernet Sauvignon is that it is a tough, hardy vine that consistently produces good quality fruit. The grapes are small with skins that are tough and thick with a deep bluish black color. The thickness and the toughness of the skin results in good resistance to vine diseases and help it to recover quickly in the event of late seasonal rains.<br /> The vine does require a fairly long growing season, however, and generally any moderately warm, not too rainy climate, with well drained soils is best suited for the grape. In general, regions that are cooler have more potential for herbaceous notes and the infamous “green bell pepper” aroma that occurs from less than ideally ripened grapes. In regions where the grape is exposed to excess warmth and over-ripening, there is a propensity for the wine to have more “jammy” notes.</p> <p> </p> <p><img alt="Pair like a pro" data-entity-type="file" data-entity-uuid="30aeb955-4fe3-4965-bf93-7e62c4b76e60" src="/sites/default/files/inline-images/Pair%20Cabernet.jpg" /></p> <p><strong>How to Pair Like a Pro</strong></p> <p>Cabernet tends to be the favorite accompaniment of fat-laced red meat and rich sauces. The quintessential pairing of Cabernet Sauvignon is with lamb. Perhaps there is a connection, after all to the sheep that gives presence to the Bordeaux town flag of Pauillac which is the home of Chateaux Latour, Lafite Rothschild, and Mouton Rothschild. With a roast leg, or with lamb chops, the flavor of Cabernet is ideal, and the tannins present in the wine serve to cut the fattiness, and refresh the palate. Sauces with garlic, red wine marinades, mustard, rosemary or other herbs will add flavor to the lamb and complement the wine deliciously.</p> <p><br /> The other optimal choice with Cabernet is beef served with a simple herb butter, or with a red wine sauce. Furthermore, the oak influences of Cabernet can be matched with similar cooking methods such as grilling or smoking. Complimentary oak-flavored spices like vanilla, dill weed, black pepper and brown sugar can also pair nicely.</p> <p>The flavors of Cabernet, and especially its standard load of tannin do not go well with fish dishes, but there is a role for Cabernet with a whole roast chicken sauced with garlic, butter and herbs. Cabernet also goes well with with heartier English cheeses like Cheddar, Wensleydale, Cheshire or Gloucester.</p> <p>The general rule of thumb is to consider that as the preparation and the saucing of the food gets richer, the better the match with a big, bold Cabernet Sauvignon. But no matter what you like to eat, another rule of thumb is to drink what you enjoy! Use many frozen puff pastry and sandwich them between 2 baking sheets to keep them flat and prevent too much puffing.)</li> <li>Chevre mashed potatoes</li> </ul> <p> </p> <p><strong>For the Roasted Beets:</strong></p> <ul> <li>3 medium beets</li> <li>Salt and extra virgin olive oil to taste</li> </ul> <p>1.    Preheat the oven to 400 F.<br /> 2.    Wrap beets in foil and roast in the oven until tender, 30-40 minutes.<br /> 3.    When cool enough to handle, peel the beets and cut them into 1/2-inch pieces.<br /> 4.    Toss with salt and olive oil.</p> <p> </p> <p><strong>For the Mushroom Duxelles</strong></p> <ul> <li>2 Tbsp butter</li> <li>1/2 lb. finely chopped mushrooms such as cremini or maitakes</li> <li>2 shallots, minced</li> <li>1 clove garlic, minced</li> <li>1-1/2 Tbsp fresh herbs like rosemary and thyme</li> <li>1/4 cup red wine</li> <li>Salt and pepper to taste</li> <li>2-3 Tbsp heavy cream</li> </ul> <p>1.    Heat butter in a skillet over medium-high heat.<br /> 2.    After butter melts, add shallots and garlic and sauté for 3 minutes.<br /> 3.    Add Mushrooms, salt, pepper, and herbs.<br /> 4.    Reduce the heat to medium or medium-low and simmer until all liquids have evaporated. Unlike a typical mushroom sauté, this will take a little longer (10 to 12 minutes). Also try to avoid browning the mushrooms.<br /> 5.    Add wine and cook until evaporated, usually around 4 or<br /> 5 minutes.<br /> 6.    Finish with cream.</p> <p> </p> <p><strong>For the Chevre Whipped Potatoes</strong></p> <ul> <li>2-1/2 pounds Russet potatoes, peeled and cut into chunks</li> <li>1 Tbsp salt</li> <li>3 ounces chevre</li> <li>1/2-2/3 cup milk, heated</li> <li>Salt to taste</li> </ul> <p>1.    Place potatoes in a large saucepan, cover with cold water and add 1 Tbsp salt.<br /> 2.    Bring to a boil and cook until the potatoes are tender, about 10 minutes.<br /> 3.    Drain and return the potatoes to the pan.<br /> 4.    Shake the pan over low heat to dry the potatoes slightly.<br /> 5.    Remove the pan from the heat.<br /> 6.    Mash the potatoes with a potato masher, ricer or food mill.<br /> 7.    Stir in goat cheese and enough hot milk to make a smooth puree.<br /> 8.    Season with salt and pepper.</p> <p> </p> <p><strong>To assemble</strong></p> <p>1.    Spoon the potatoes onto plates.<br /> 2.    Spread duxelles on the puff pastry and top with beets.<br /> 2.    Place over the potatoes and serve drizzled with your favorite demi-glace.</p> <p>Sequoia Grove’s <strong>A Taste For Cabernet Wine &amp; Food Experience</strong> opens new horizons for pairing food with Cabernet Sauvignon. The attentive host saw us to our table and our waiter was over in moments with water and an offer of drinks. A Caesar salad was redolent with a perky splash of lemon.  At other tables, burgers were accompanied by piles of fries and drool-worthy pastas came out steaming.  At the conclusion of our meal, our young guest was even treated to a complimentary ice cream sundae – a perfect ending!<br /> For all menu items, Letson is quick to point out his passion for produce picked at the height of the season.
