Ceviche

The perfect pairing to accompany a glass of 

Vin Gris Cuvee

Prep time: Yields 6 servings

  • 1lb. shrimp

  • 1/2 bunch cilantro

  • 1 cucumber

  • 1/2 red onion

  • 2 roma tomatoes

  • salt & pepper to taste

  • 1/4 teaspoon cumin

  • 1/4 cup lime juice

  • 1 cup clamato juice

  • 1 jalapeno

 

This recipe is as simple as they come! Get ready for your new favorite go-to meal on hot evenings when turning on the oven or firing up the stove seems like a terrible idea.

  • Cook Shrimp in Lime Juice: Add the cleaned and chopped shrimp into a medium size bowl. Add the lemon juice, ensure that the shrimp is completely covered with juice. Cover the bowl and place in refrigerator for 3 hours to overnight.

  • If you'd like to make things faster, purchase cooked, deveined, tail & shell-off shrimp. This means you get to avoid the marinating time & simply se the lime juice for flavor.

  • After the shrimp is fully cooked, pink and opaque, strain out the lemon juice that the shrimp was cooked in and discard.

  • Mix: In a large bowl combine the diced cucumber, tomato, jalapeno, cilantro and red onion. Add in the shrimp. Stir to combine.

  • Make Sauce: Pour in the clamato juice and lime juice. Add the seasonings and hot sauce as desired or needed. Stir to combine.

  • Serve shrimp ceviche cold.

* Don't forget your favorite add-ins! Add your favorite hot sauce, green onion, or an extra twist of lime to bring your bowl of ceviche to perfection.
